Fatfree Tomato-Basil Dressing


Ingredients (use vegan versions):


  • 1/2 cup vegetable juice cocktail
  • 1 tablespoon powdered fruit pectin
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons chopped fresh bazil
  • 1 teaspoon vegan brown sugar
  • 1 clove garlic -- minced


Directions:



In small bowl, combine all ingredients; stir until pectin is dissolved.
Serve with tossed salad greens or vegetable salad.


Makes 2/3 cup, per 2 tbsp serv: 10 cal, 0g fat, 0 mg chol, 90 mg sod
